We believe the spirits we drink are more than just a sum of their ingredients. They are a window into a region’s cultures, its people, and its heritage. Our story begins with the question:

If we looked through our window, what would make us proud?

Pochle is a Zero waste initiative, makes use of amazing and abundant local produce, contributes to the circular economy, engages with the community, focuses on sustainability, and helps everyones heroes … the bees!

About Chris

Chris (aka Chico) has always failed to colour within the lines! As a child he would sneak into the local walled garden, pick the apples in the orchard, and then take them to his two elderly neighbours (Elizabeth and Helen Henderson) who would then exchange his ‘Pochle’ of apples for butterscotch sweets. 

Now a bartender of 25 years, working across Glasgow, Edinburgh, Melbourne, and Prague Chris owns his own bar in Edinburgh’s Rose Street called The Black Cat which specialises in malt whisky and folk music.

As a well-travelled individual, raised in rural Aberdeenshire, Chris has always appreciated his place in this world, nature and what Scotland’s produce has to offer. 

The Pochle story began in 2018 when he began collecting windfall apples from neighbours and making cider from them in the basement of his friend’s pub. Not even a global pandemic would stand in the way and in 2023 Chris launched his first sprit - Pochle Geal.
